Traditionally, people would roast the head of most animals they cooked, except poultry. Certain parts like the tongue is considered a delicacy. It’s definitely not for everyone but it’s not stupid either.

For the people concerned about eating horses, rest in peace at least, this is not a horse (nor a pony), the front jaw is wrong for that. I’m not sure which sort of ungulate it is, can’t get a good enough view, but I think it *might* be a deer? The eating in car and black rubber glove give american vibes so I’d bet on white-tailed deer but correct me if someone has a better info.
[Edit] Mule deer have also been proposed and people pointed out white-tailed deers are smaller than that. Sheep have also been proposed, which would make sense in “head you could get at a butcher” too. My own vote is now between sheep and mule deer.
